Rava ladoos

After a long hiatus, I am back with something sweet to resume my blogging. It’s raining cats and dogs here in Mumbai and that was when I felt may be I should try my hands in cooking something simple and sweet. Rava ladoos fitted perfectly with the season and ingredients available at home.
Here’s how you can make this delicious sweet in less than 30 minutes.


Ingredients:
Rava – 1 cup
Sugar – 3/4th cup
Cashew nuts – 8 half pieces
Raisins – 8 pieces
Crushed cardamom powder - 1 teaspoon
Ghee – 4 teaspoons
Hot milk – 100 ml
Preparation time: 25 minutes
Method:
·         Place a pan on the stove at low flame and add a teaspoon of ghee. Once it melts, add cashews and roast them until they turn golden brown. Remove them and now sauté the raisins until they get roasted well. Similarly remove them from the pan once done.
·         Add 2 teaspoons of ghee and rava to the pan. Roast them on a low flame in the beginning for 5  minutes and then on medium flame for 2 mins until you see the colour of the rava changing to very light brown indicating it has got roasted.
·         Now add sugar in the same pan and roast the mixture on low flame. Most of the sugar crystals will melt and get mixed well in the heat but some crystals remain visible. This will give the crunchy taste to the ladoos. Keep sauting for another 5 minutes.
·         Once you see the rava  turning to a slightly dark brown colour with a nice roasted aroma, most of the sugar crystals would have melted and it is time to remove the pan from the stove. Now add the roasted cashews, raisins and cardamom powder to this mixture and stir to mix well and let it cool for 2 minutes.
·         Add the hot milk slowly to act as a binding agent while making ladoos. Only add milk as a binding agent and you may not need to use the entire quantity.
·         Try to make the ladoos in round shape by rolling it between your palms. You can do it with one palm by rolling it continuously until they all bind together and use the other palm to give it the perfect round shape.
·         Note that the mixture should be slightly hot while you roll them into balls but don’t worry it won’t hurt much.
·         You can make 15 ladoos of small size with the above measurements.
·         Offer to God and enjoy them while watching the rains splash against your window.
·         Since we have used milk you can store it only for 2 days. But if you want to store longer then use hot ghee instead of milk as the binding agent. You will get an enriched version of the ladoos.

This recipe is so simple that even guys can make and surprise their family with their cooking skills.
